Ingredients:
10 eggs
3/4 - 1 cup shredded cheese (your choice on flavor)
fresh spinach (3 - 4 cups or 1 regular sized bag)
Cut up vegetables (your choice such as onion, mushrooms, bell peppers, tomatoes)
2 tablespoons of olive oil or butter
Non stick cooking spray for glass baking dish
salt and pepper to taste
