16 ounce pasta shells (Rotini, Penne, Rigatoni or Bowtie works best)

3 medium cucumbers

4 oz. mozzarella cheese

1 cup black olives, canned



  • Bring a pot of water (about 5 cups) to a boil and add pasta (cook according to package instructions)
  • Drain the pasta
  • Peel and chop up 1 1/2 of the cucumbers and stir in to pasta
  • Pour out onto a platter and make a rectangle shape with the pasta
  • Cut two slices of mozzarella cheese and make them into circles using a cookie cutter or knife
  • Use olives to create Frankenstein's hair, pupils and mouth
  • Use the rest of the cucumber to make the “bolts” in the side of his neck


Pumpkin Mummy Hand Pies (it's called a 'hand pie' because the pie fits in your hand)

This recipe makes ~ 9 mummy hand pies



Approximately 18 candy eyes (or you can use the plastic googly eyes but you can't eat the plastic googly eyes)


Note: You can buy pre-made pie crust dough from the store if you don't want to make the dough

2 1/2 cups all purpose flour

1 tablesoon granulated sugar

1 teaspoon salt

1 cup frozen unsalted butter grated

1/2 cup ice cold water


3/4 cup 100% canned pumpkin

1 egg yolk

2 ounces cream cheese room temperature

2 tablespoons light brown sugar packed

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon nutmeg

1/8 teaspoon allspice

1/2 teaspoon vanilla extract


2 tablespoons granulated sugar

1 teaspoon ground cinnamon


1 egg white lightly beaten

1/2 tablespoon water




  • In a large bowl, whisk together the flour, sugar and salt; set aside
  • Using the large holes of a cheese grater, grate the frozen butter
  • Using a pastry blender, quickly blend the butter pieces into the flour mixture until the mixture resembles small peas
  • Add the ice water into the mixture and stir mixture
  • Press the dough between your fingers - if it sticks together, the dough is ready - If not, add more water, a tablespoon at a time, up to 3 tablespoons if needed
  • Pour the dough out onto a lightly floured surface
  • Knead the dough a couple of times to form a ball
  • Divide the ball in half and flatten each half into a disc like a pancake, then wrap each disc in plastic wrap
  • Refrigerate for at least 1-2 hours before using
  • Cook on both sides and serve hot
  • Optional - spread peanut butter onto your pancakes
  • Optional - serve with eggs and sausage or bacon


  • In a small mixing bowl, using an electric hand mixer to beat together the cream cheese, granulated sugar and brown sugar until combined
  • Add pumpkin, egg yolk, cinnamon, ginger, nutmeg, allspice and vanilla extract and beat until well combined
  • Cover the bowl and chill until ready to assemble the pies


  • In a small bowl, combine cinnamon and sugar and  set aside to use later


  • In a small bowl, combine egg white and 1 tablespoon water to make an egg wash and set aside to use later
  • Preheat oven to 375 degrees
  • Line a large baking sheet with parchment paper and set aside


  • Roll out one disk of dough onto a lightly floured surface to about 13x11 inch rectangle
  • Trim edges to get straight edge, and then cut into nine 4×3 inch rectangles (you can make them smaller or larger if you prefer)
  • Arrange the rectangles on the prepared baking sheet. Spread a heaping tablespoon of pumpkin pie filling onto each rectangle, leaving rim on all sides uncoated
  • Roll out second dough disc and cut into 1/2-inch strips
  • Using your finger brush the edges with the egg wash
  • Top with dough strips to create the mummy wrapping
  • Sseal edges with your fingertips, and trim the excess off of the strips
  • Brush the strips with egg wash
  • Sprinkle the hand pie with cinnamon sugar
  • Vake until golden brown about 20 minutes
  • Stick candy eyes onto cooled mummies
  • Store hand pies in the refrigerator in an airtight container
  • Optional, top with whipped cream when ready to eat

Devons Pancakes



1 ½ cups all purpose flour

3 ½ teaspoons baking powder

1 teaspoon salt

1 tablespoon white sugar

1 ¼ cups milk

1 egg

3 tablespoons butter, melted

  • In a large bowl, sift together the flour, baking powder, salt and sugar
  • Make a space in the center and pour in the milk, egg and melted butter and mix until smooth
  • Add some sliced banana and blueberries to the mix
  • Heat a lightly oiled griddle or frying pan over medium high heat
  • Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake
  • Cook on both sides and serve hot
  • Optional - spread peanut butter onto your pancakes
  • Optional - serve with eggs and sausage or bacon



Smashed Sweet Potatoes

2 large sweet potatoes, or 3 medium sweet potatoes washed and sliced (can use other potato types to vary the recipe)

1/4 cup of butter, melted

3 garlic cloves

1 tablespoon minced thyme leaves

1/2 cup freshly grated Parmesan cheese

Salt and pepper to taste

pinch of nutmeg





Note: Bake at 425 degrees for about 25 minutes, then smash each cooked potato slice with the bottom of a beverage glass, add Parmesan cheese and then broil for 4 minutes to melt the cheese



Vida’s Peanut Butter Cookies

  • Scoop cookie dough onto cookie sheet
  • Dip the bottom of a drinking glass in water and sugar
  • Squish each cookie flat with the bottom of the drinking glass
  • Optional: press the tines of a fork onto each cookie to make a design
  • Bake at 325 degrees for 10 to 12 minutes

1 18.25 ounce box white cake mix (or chocolate if you prefer)

2 eggs

1/2 cup vegetable oil

1 teaspoon vanilla extract

3/4 cup edible rainbow colored sprinkles

(holiday theme sprinkle color ideas:  red, white and blue for 4th of July, black and orange for Halloween, red and green for Christmas and blue and white for Hanukkah)



  • Preheat oven to 350 degrees
  • In a large bowl, mix together the cake mix, eggs, oil and vanilla until smooth
  • Stir in 1/4 cup of the sprinkles
  • Pour the remaining 1/2 cup of sprinkles onto a plate
  • Roll the dough into tablespoon sized balls
  • Roll the balls of dough around in the sprinkles to coat
  • Place the balls of dough 2 inches apart on a nonstick baking sheet
  • Bake for 8 - 10 minutes or until cookies are set and lightly browned
  • Let cookies cool and serve



Paula’s Easy Enchilada Casserole

1 bag shredded cheddar cheese

12 pack corn tortillas

1 large can Las Palmas Enchilada Sauce

1 small can refried beans

green onion chopped

black sliced olives

1-pound ground beef

long deep casserole pan



  • Cook ground beef in skillet
  • Drain and add green onions and black olives
  • Mix and set aside
  • Line dish with a layer of tortilla
  • Layer half meat, half beans and half enchilada sauce
  • Top with cheese and repeat
  • Bake at 350 degrees for approximately 30-40 minutes



Mirna’s Armenian Lentil Soup

3 tablespoons canola oil

1 large onion, chopped

3 garlic cloves, minced

1 tablespoon ground cumin

1/2 teaspoon coriander

1 tablespoon Hungarian paprika

6 cups chicken stock

1/2 cup dried lentils, rinsed and drained

20 oz. frozen spinach, thawed

29 oz. tomatoes, chopped

salt and pepper to taste

4 tablespoons lemon juice



  • Put oil, onion, garlic, cumin, coriander, and paprika into a cooking pot
  • Sauté for 5 minutes then add the chicken stock
  • Add the lentils, spinach, tomatoes and bring to a boil
  • Reduce the heat to low, season with salt and pepper, and simmer, covered, until the lentils are tender, about 50 minutes
  • Season with the lemon juice and additional salt and pepper, if needed
  • Let sit for 5 minutes before serving.

  • Preheat a grill pan over medium high heat
  • Spread the butter on both sides of the bread and season with the parsley and garlic powder
  • Place on the grill pan and cook on one side until golden brown
  • Flip, and continue cooking until other side is golden brown. Remove and serve



Angie’s Grilled Cheese Sandwich

2 slices of your favorite bread

1.5 tablespoons butter (or as much as it takes)

2 slices cheddar cheese (1 is OK but not as cheesy as 2)



  • Preheat skillet over medium heat
  • Generously butter one side of a slice of bread
  • Place butter side down onto skillet bottom and add cheese
  • Butter a second slice of bread on one side and place butter side up on top of sandwich
  • Grill until lightly browned and flip over
  • Continue grilling until cheese is melted

1 whole cabbage

1 bunch of cilantro

1 onion

½ stick of butter or margarine



  • Shred/cut the cabbage, cilantro and onion
  • Place ½ stick of butter or margarine in a skillet on medium heat
  • When butter or margarine has melted, add the ingredients
  • Place a lid on the skillet
  • Mix the ingredients and add salt to taste
  • The ingredients will change color when done
  • Place over white rice or use as a side with meat of your choice



Banana Chocolate Chip Energy Bites

1 cup dry oats

¼ cup peanut butter

¼ cup honey

1 or ½ banana

½ cup chocolate chips



  • Mix oats, peanut butter and honey in a large bowl
  • Mash the banana, then add it into the bowl of oats
  • Add chocolate chips and mix
  • Place bowl in the refrigerator for 1 hour
  • With your hands, mold mixture into bite-sized balls (will be sticky)


 Enjoy! Save leftovers in Ziploc bags and put in freezer. Great eaten frozen.



3 Ingredient Oatmeal Chocolate Chip Banana Cookies

2 large bananas

1 3/4 cup quick oats

1/2 cup chocolate chips (for fun try the mini chocolate chips or substitute peanut butter chips)



  • Preheat oven to 350 degrees and line a large cookie sheet with parchment paper
  • Mash bananas in a large bowl (make sure there's no lumps)
  • Add in the oats and mix well to combine
  • Add in the chocolate chips and mix well
  • Scoop 2 tablespoons at a time of the mixture onto your cookie sheet about 1 inch apart from each other
  • Bake for 15 - 20 minutes until the cookies are golden brown on top


After they cool down, they are ready to eat. Store any left overs in an air tight container for up to 2 days. Enjoy! 



3 Ingredient Coconut Macaroons

3 1/4 cups of shredded coconut

3/4 cup of canned sweetened condensed milk (about 1/2 can)

1/2 cup chocolate chips or other chocolate like Hershey's bar



  • Preheat oven to 350 degrees and line a large cookie sheet with parchment paper
  • In a medium bowl combine the coconut and the sweetened condensed milk with a spoon until the coconut and milk are completely mixed (the mixture will be very sticky but not too wet)
  • Scoop 2 tablespoons at a time of the mixture onto your cookie sheet about 1 inch apart from each other
  • Bake for 15 - 20 minutes until the cookies are golden brown on top
  • While cookies are cooling, melt your chocolate (in a microwave is fine as long as you use a microwaveable bowl)
  • Once cookies have cooled, dip the bottom of each cookie in the melted chocolate and then place the cookies on a baking rack to dry


Store any left overs in an air tight container for up to 4 days. Enjoy!



Healthy Banana Pancakes

     For one pancake:

            1 banana

            1 egg

     For two pancakes:

            2 bananas

            2 eggs

     For four pancakes:

            4 bananas

            8 eggs



  • Mash up bananas in a bowl
  • Whisk eggs and add to banana paste
  • Fry gently in a pan on low-medium heat with a little heated oil or butter


Enjoy with your favorite topping.


Prep time: 3 minutes

Cook time: 7 minutes

Ingredients (for about 32 chips):

2 cups shredded mozzarella cheese

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon garlic powder

mini pepperoni slice or regular size pepperoni

salt and pepper to taste



  • Preheat oven to 350 degrees
  • Mix cheese, basil, oregano, garlic powder, salt and pepper
  • Spoon mixture into a greased mini muffin tin. Top with pepperoni
  • Bake for 5-8 minutes or until cheese is melted and edges are slightly brown, then cool for 10 minutes


Enjoy with warm marinara sauce, pizza sauce or ranch dressing.

You can add additional toppings like bell peppers, onions, olives and more. Have fun!



Super Easy Chicken Pot Pie

store bought ready-made pie dough

2 regular size carrots cubes

1 bag frozen or fresh mixed vegetables

1 cup potatoes cut into small cubes

1 cup chopped celery

1 big can cream of mushroom soup

1 pound chicken cut into cubes

1 small onion

½ stick butter

salt and pepper to taste



  • Preheat oven to 350 degrees
  • Follow directions to prepare your store bought pie crust dough in a pie pan
  • In a big frying pan, melt butter to medium heat
  • Add onion stirring occasionally until tender
  • Stir in chicken cubes until slightly brown
  • Add potato and the rest of the mixed vegetables and cook covered for two minutes
  • Uncover and stir in cream of mushroom soup, salt and pepper until well blended
  • Remove from heat and scoop the mixture into your prepared pie pan
  • Bake for 30 minutes or until crust is golden brown
  • Let stand for five minutes and ENJOY

Easy Fruit & Yogurt Parfaits

1 32-ounce container of Greek or plain yogurt

3 tablespoons of honey

1 pound of fresh or defrosted berries

2 cups of your favorite granola



8 mason jars or cups

  • Place Yogurt in a bowl and whisk in honey
  • Use an ice cream scoop to fill jars or cups half-way with yogurt
  • Add a layer of berries onto the yogurt
  • Top with another layer of yogurt
  • Add another layer of berries
  • Add a layer of crunchy granola just before serving


You may make this ahead of time and refrigerate, but do not add the granola until you are ready to serve the parfaits.


This is a great breakfast or dessert option for all ages.

Ingredients (for about 2 dozen cookies):

1 stick (8 tablespoons) Unsalted butter, at room temperature

1/3 cup packed light brown sugar

1/3 cup granulated sugar

1 tsp. pure vanilla extract

1 large egg

1 cup all-purpose flour

1 cup rolled oats

½ tsp. baking soda

½ tsp. ground cinnamon

½ tsp. fine salt

¾ cup semisweet chocolate chips

½ cup honey-roasted peanuts (can use chopped walnuts as a substitute)



  • Line 2 baking sheets with parchment paper
  • Beat the butter, brown sugar, granulated sugar with an electric mixer in a large bowl until fluffy
  • Add the vanilla and egg into the bowl and beat to combine
  • In a separate mixing bowl, whisk together the flour, oats, baking soda, cinnamon and salt
  • Add the flour mixture to the butter mixture and beat until just combined
  • Using a spatula or spoon, stir in the chocolate chips and honey-roasted peanut
  • Scoop slightly mounded tablespoons of the dough and roll into balls
  • Arrange balls about 2 inches apart on the prepared baking sheets and refrigerate for 30 minutes
  • Preheat oven to 350 degrees
  • Bake for 12 to 15 minutes until the cookies are set and golden on the bottom
  • Let cookies cool on the baking sheets for 10 minutes and then transfer to wire racks or a clean surface to cool completely

4 English muffins, split

1/2 cup of canned or jar pizza sauce

2 cups of shredded mozzarella cheese

Topping suggestions (all are optional): - pepperoni (or other meat), olives, mushrooms, bell peppers, pepperoncini, onions, pineapple



  • Preheat the oven to 375 degrees
  • Split the English muffins in half
  • Spoon sauce onto the muffin halves (face up)
  • Add cheese and then add any optional toppings on top of the cheese
  • Place the English muffins on a baking sheet and place on the middle rack for 10 minutes or until the cheese is melted and toppings are crispy


Let cool and enjoy!



One Pan Egg Sandwich

Yummy twist on breakfast with a quick and easy cleanup. 



2-3 eggs

Optional: 2 tablespoons of milik (for fluffier eggs)

2 slices of bread

1 or 2 slices of your favorite cheese (or a handful of your favorite grated cheese)

  • Put sour cream in a bowl
  • Dip washed strawberry in sour cream
  • Put brown sugar in a bowl
  • Dip strawberry with sour cream into the brown sugar


Eat one at a time after dipping or place them on a plate to serve.

Nonstick cooking spray or butter, for greasing the baking dish

Two 12-ounce bags of frozen mixed berries 

1 box yellow cake mix 

1/3 cup finely chopped walnuts  

1/3 cup rolled oats 

1 stick (8 tablespoons) unsalted butter, melted

Optional: whipped cream or vanilla ice cream to put on top when serving



  • Preheat oven to 350 degrees
  • Grease a 9 by 13 inch glass baking dish with cooking spray or butter
  • Put the berries in the prepared baking dish
  • Evenly distribute the cake mix over the berries
  • Sprinkle the walnuts and oats evenly across the top
  • Evenly drizzle the butter over the entire dish
  • Bake until firm and golden brown (about 55 minutes)
  • Let sit and cool for 5 minutes
  • Serve with ice cream or whipped cream

  • Evenly drizzle the melted butter on top

Easy Chicken Cheese Quesadilla

Shredded or sliced cheese

Shredded or sliced cooked chicken (optional)

2 flour tortillas 

Optional: instead of chicken, you can add a fried egg and cooked bacon for a breakfast quesadilla

Optional: serve with salsa


  • Place 1 tortilla on nonstick pan
  • Add a little shredded or sliced cheese (whichever flavor you prefer)
  • Add shredded or sliced cooked chicken (optional)
  • Add more shredded cheese on top of chicken (this will help the tortillas to stick together when the cheese melts)
  • Place second tortilla on top of cheese and chicken
  • Turn on stove on to medium heat
  • Cook both sides until golden brown and cheese has melted (use a spatula to flip your quesadilla)
  • Place your quesadilla on a plate and wait 1 - 3 minutes for it to cool
  • Cut into 2 or 4 pieces using a pizza cutter or a knife


Parmesan Pork Meatballs

12 oz ground pork (orr ground beef or ground turkey)

1 cup (or 8 oz) cooked spaghetti

2 oz  grated parmesan

6 oz sliced cremini mushrooms

1 tsp italian seasoning blend

1 Tbsp mayonnaise

¼ cup Italian breadcrumbs (Panko or other brand)

1 cup (or 8 oz) marinara sauce

 salt and pepper to taste



Prepare the ingredients:

    • Preheat oven to 425 degrees
    • Rinse and pat dry fresh produce
    • Cook spaghetti 8 - 10 minutes until al dente
    • Combine cooked spaghetti, 2 tsp. olive oil, and pinch of salt in a small baking dish
    • Top evenly with mushrooms and marinara sauce

Make the meatballs:

    • In a mixing bowl, combine ground meatpankoItalian seasoningmayonnaise, half the Parmesan (reserve remaining for garnish), ¼ tsp. salt and pinch of black pepper
    • Form meat mixture into six equally-sized meatballs (golf ball size)
    • Place evenly over spaghetti-mushroom mixture in baking dish

Bake the dish:

    • Bake uncovered in hot oven for about 25 - 30 minutes until meatballs reach a minimum internal temperature of 160 degrees
    • Carefully, remove from oven. Stir spaghetti and sauce until combine
    • Plate meatballs and pasta mixture and top with remaining parmesan
