Vida’s Peanut Butter Cookies

Ingredients:

1 egg
I cup peanut butter
1 cup sugar

 

Instructions:

  • Scoop cookie dough onto cookie sheet
  • Dip the bottom of a drinking glass in water and sugar
  • Squish each cookie flat with the bottom of the drinking glass
  • Optional: press the tines of a fork onto each cookie to make a design
  • Bake at 325 degrees for 10 to 12 minutes

 

 

Paula’s Easy Enchilada Casserole

Ingredients:

1 bag shredded cheddar cheese

12 pack corn tortillas

1 large can Las Palmas Enchilada Sauce

1 small can refried beans

green onion chopped

black sliced olives

1-pound ground beef

long deep casserole pan

 

Instructions:

  • Cook ground beef in skillet
  • Drain and add green onions and black olives
  • Mix and set aside
  • Line dish with a layer of tortilla
  • Layer half meat, half beans and half enchilada sauce
  • Top with cheese and repeat
  • Bake at 350 degrees for approximately 30-40 minutes

 

 

Mirna’s Armenian Lentil Soup

Ingredients:

3 tablespoons canola oil

1 large onion, chopped

3 garlic cloves, minced

1 tablespoon ground cumin

1/2 teaspoon coriander

1 tablespoon Hungarian paprika

6 cups chicken stock

1/2 cup dried lentils, rinsed and drained

20 oz. frozen spinach, thawed

29 oz. tomatoes, chopped

salt and pepper to taste

4 tablespoons lemon juice

 

Instructions:

  • Put oil, onion, garlic, cumin, coriander, and paprika into a cooking pot
  • Sauté for 5 minutes then add the chicken stock
  • Add the lentils, spinach, tomatoes and bring to a boil
  • Reduce the heat to low, season with salt and pepper, and simmer, covered, until the lentils are tender, about 50 minutes
  • Season with the lemon juice and additional salt and pepper, if needed
  • Let sit for 5 minutes before serving.

Ingredients:

garlic powder

 

Instructions:

  • Preheat a grill pan over medium high heat
  • Spread the butter on both sides of the bread and season with the parsley and garlic powder
  • Place on the grill pan and cook on one side until golden brown
  • Flip, and continue cooking until other side is golden brown. Remove and serve

Ingredients:

4 slices white bread

3 tablespoons butter, divided

2 slices cheddar cheese

 

Instructions:

  • Preheat skillet over medium heat
  • Generously butter one side of a slice of bread
  • Place butter side down onto skillet bottom and add 1 slice of cheese
  • Butter a second slice of bread on one side and place butter side up on top of sandwich
  • Grill until lightly browned and flip over
  • Continue grilling until cheese is melted
  • Repeat with remaining 2 slices of bread, butter and slice of cheese

Ingredients:

1 whole cabbage

1 bunch of cilantro

1 onion

½ stick of butter or margarine

 

Instructions:

  • Shred/cut the cabbage, cilantro and onion
  • Place ½ stick of butter or margarine in a skillet on medium heat
  • When butter or margarine has melted, add the ingredients
  • Place a lid on the skillet
  • Mix the ingredients and add salt to taste
  • The ingredients will change color when done
  • Place over white rice or use as a side with meat of your choice

 

 

Banana Chocolate Chip Energy Bites

Ingredients:

1 cup dry oats

¼ cup peanut butter

¼ cup honey

1 or ½ banana

½ cup chocolate chips

 

Instructions:

  • Mix oats, peanut butter and honey in a large bowl
  • Mash the banana, then add it into the bowl of oats
  • Add chocolate chips and mix
  • Place bowl in the refrigerator for 1 hour
  • With your hands, mold mixture into bite-sized balls (will be sticky)

 

 Enjoy! Save leftovers in Ziploc bags and put in freezer. Great eaten frozen.

 

 

Healthy Banana Pancakes

Ingredients:

     For one pancake:

            1 banana

            1 egg

     For two pancakes:

            2 bananas

            2 eggs

     For four pancakes:

            4 bananas

            8 eggs

 

Instructions:

  • Mash up bananas in a bowl
  • Whisk eggs and add to banana paste
  • Fry gently in a pan on low-medium heat with a little heated oil or butter

 

Enjoy with your favorite topping.

 

Prep time: 3 minutes

Cook time: 7 minutes

 

 

Pizza Chips

Ingredients (for about 32 chips):

2 cups shredded mozzarella cheese

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon garlic powder

mini pepperoni slice or regular size pepperoni

salt and pepper to taste

 

Instructions:

  • Preheat oven to 350 degrees
  • Mix cheese, basil, oregano, garlic powder, salt and pepper
  • Spoon mixture into a greased mini muffin tin. Top with pepperoni
  • Bake for 5-8 minutes or until cheese is melted and edges are slightly brown, then cool for 10 minutes

 

Enjoy with warm marinara sauce, pizza sauce or ranch dressing.

You can add additional toppings like bell peppers, onions, olives and more. Have fun!

 

 

Super Easy Chicken Pot Pie

Ingredients:

store bought ready-made pie dough

2 regular size carrots cubes

1 bag frozen or fresh mixed vegetables

1 cup potatoes cut into small cubes

1 cup chopped celery

1 big can cream of mushroom soup

1 pound chicken cut into cubes

1 small onion

½ stick butter

salt and pepper to taste

 

Instructions:

  • Preheat oven to 350 degrees
  • Follow directions to prepare your store bought pie crust dough in a pie pan
  • In a big frying pan, melt butter to medium heat
  • Add onion stirring occasionally until tender
  • Stir in chicken cubes until slightly brown
  • Add potato and the rest of the mixed vegetables and cook covered for two minutes
  • Uncover and stir in cream of mushroom soup, salt and pepper until well blended
  • Remove from heat and scoop the mixture into your prepared pie pan
  • Bake for 30 minutes or until crust is golden brown
  • Let stand for five minutes and ENJOY

1 32-ounce container of Greek or plain yogurt

3 tablespoons of honey

1 pound of fresh or defrosted berries

2 cups of your favorite granola

 

Supplies:

8 mason jars or cups

mixing bowl

whisk

ice cream scoop

spoon

 

Instructions:

  • Place Yogurt in a bowl and whisk in honey
  • Use an ice cream scoop to fill jars or cups half-way with yogurt
  • Add a layer of berries onto the yogurt
  • Top with another layer of yogurt
  • Add another layer of berries
  • Add a layer of crunchy granola just before serving

 

You may make this ahead of time and refrigerate, but do not add the granola until you are ready to serve the parfaits.

 

This is a great breakfast or dessert option for all ages.

Ingredients (for about 2 dozen cookies):

1 stick (8 tablespoons) Unsalted butter, at room temperature

1/3 cup packed light brown sugar

1/3 cup granulated sugar

1 tsp. pure vanilla extract

1 large egg

1 cup all-purpose flour

1 cup rolled oats

½ tsp. baking soda

½ tsp. ground cinnamon

½ tsp. fine salt

¾ cup semisweet chocolate chips

½ cup honey-roasted peanuts (can use chopped walnuts as a substitute)

 

Instructions:

  • Line 2 baking sheets with parchment paper
  • Beat the butter, brown sugar, granulated sugar with an electric mixer in a large bowl until fluffy
  • Add the vanilla and egg into the bowl and beat to combine
  • In a separate mixing bowl, whisk together the flour, oats, baking soda, cinnamon and salt
  • Add the flour mixture to the butter mixture and beat until just combined
  • Using a spatula or spoon, stir in the chocolate chips and honey-roasted peanut
  • Scoop slightly mounded tablespoons of the dough and roll into balls
  • Arrange balls about 2 inches apart on the prepared baking sheets and refrigerate for 30 minutes
  • Preheat oven to 350 degrees
  • Bake for 12 to 15 minutes until the cookies are set and golden on the bottom
  • Let cookies cool on the baking sheets for 10 minutes and then transfer to wire racks or a clean surface to cool completely

4 English muffins, split

1/2 cup of canned or jar pizza sauce

2 cups of shredded mozzarella cheese

Topping suggestions (all are optional): - pepperoni (or other meat), olives, mushrooms, bell peppers, pepperoncini, onions, pineapple

 

Instructions:

  • Preheat the oven to 375 degrees
  • Split the English muffins in half
  • Spoon sauce onto the muffin halves (face up)
  • Add cheese and then add any optional toppings on top of the cheese
  • Place the English muffins on a baking sheet and place on the middle rack for 10 minutes or until the cheese is melted and toppings are crispy

Nonstick cooking spray or butter, for greasing the baking dish

Two 12-ounce bags of frozen mixed berries 

1 box yellow cake mix 

1/3 cup finely chopped walnuts  

1/3 cup rolled oats 

1 stick (8 tablespoons) unsalted butter, melted

Optional: whipped cream or vanilla ice cream to put on top when serving

 

Instructions:

  • Preheat oven to 350 degrees
  • Grease a 9 by 13 inch glass baking dish with cooking spray or butter
  • Put the berries in the prepared baking dish
  • Evenly distribute the cake mix over the berries
  • Sprinkle the walnuts and oats evenly across the top
  • Evenly drizzle the butter over the entire dish
  • Bake until firm and golden brown (about 55 minutes)
  • Let sit and cool for 5 minutes
  • Serve with ice cream or whipped cream

 

 

Easy Chicken Cheese Quesadilla

Ingredients:

Shredded or sliced cheese

Shredded or sliced cooked chicken (optional)

2 flour tortillas 

Optional: instead of chicken, you can add a fried egg and cooked bacon for a breakfast quesadilla

Optional: serve with salsa

 

Instructions:

  • Place 1 tortilla on nonstick pan
  • Add a little shredded or sliced cheese (whichever flavor you prefer)
  • Add shredded or sliced cooked chicken (optional)
  • Add more shredded cheese on top of chicken (this will help the tortillas to stick together when the cheese melts)
  • Place second tortilla on top of cheese and chicken
  • Turn on stove on to medium heat
  • Cook both sides until golden brown and cheese has melted (use a spatula to flip your quesadilla)
  • Place your quesadilla on a plate and wait 1 - 3 minutes for it to cool
  • Cut into 2 or 4 pieces using a pizza cutter or a knife
